A Great Big Welcome to Spring!

The level of excitement grows as the rays of the sun get a stronger and warm us from within. As our tables get adorned with colourful fruit and vegetables, these healthy ingredients relieve us during our pre-summer preparations. Here is a delicious salad recipe which I believe will add zest to this process.

STRAWBERRY AND FIRIK BULGHUR SALAD

INGREDIENTS
10 medium sized strawberries
100 gr boiled firik bulgur wheat
1 bunch of bitter dock
2 spring onions
½ Mexican chili pepper
1 cucumber
½ bunch parsley
1 pinch of fresh za’atar thyme

FOR THE DRESSING
10 gr. honey
5 gr sour pomegranate molasses
25 gr rice vinegar
½ teaspoon salt
1 small garlic clove
50 gr olive oil

PREPARATION
Toss firik bulgur into boiling water and cook for 5 minutes. Leave in water for 10 minutes before draining and leaving to cool. Roughly chop bitter dock and the rest of the ingredients to a size of your choice. For the dressing, add salt, crushed garlic and rice vinegar and mix until the salt has dissolved. Then add honey and pomegranate molasses. Finally, gradually add the olive oil. Mix the dressing into the ingredients and serve.
Grilled chicken cubes could be added for extra flavour.
